This was the easiest recipe. We literally bought dough, marinera, pepperoni's and cheese and through it in the oven. Another masterpiece that Pinterest brought to my life.

Sidebar and Cakeballs

This weekend was great!
Gina found this amazing furniture discount store.
I was eying this little honey that I've kind of been looking for.
I was wanting something with the sliding pane doors.
I had something in mind that was a little bit longer but this was really close to what I visioned.
So I looked at the price tag and it read $85.
Not a bad deal, I've seen similar at Pier 1 for more than double that.
But wasn't really in the mood to spend 85 bones.
As I started to walk away the sales man says...
"I give that to you for 40 bucks"
I just couldn't pass it up!


What a steal right?
Gina got some great finds too!
Can't wait to go back.

Today I also attempted cake balls.
They're hard!
I followed a tutorial I found on YouTube.
And a few actually turned out!
I didn't know you just bake the cake and crumble it up.


Add in some frosting and the scoop it and roll it and cover it in melted chocolate.
Stick it in the fridge for a few seconds and...
VOILA!

Day at the Beach

Crazy that just last week the air was looking like so..


And just yesterday, Gina and her baby girl came over and it looked much more lovely.
We went to this man-made beach by my house.






This last week has been a little cray cray.
I left my camera cord at work, so I wasnt able to upload pictures till now.

But it's been fun.
Thursday a girl at my work threw an impromptu bachelorette party for another coworker who is getting married.
It was fun.

OH and for my work pot luck I made this amazing recipe from pinterest!


 Yeah the picture isnt the best but it was SO Yummy.
They are smores bars.

You basically melt marshmellows and mix in golden gram cereal and chocolate chips then let it cool in the fridge.
If you like muddy buddies then you will like these!

I Need To Get My Woman On

I just feel like I need to get in touch with my inner woman!
Like have a real womanly day.
Maybe this weekend. That way I can dedicate the whole day to it.

I want to BAKE. I havent baked for just fun forever it seems.
I think I want to try one of the 2 below:

I think I also want to start my paint project that I have in mind.
Starting with the easy part, all the framing needs to be painted white.
Right now its an creamish color.
I have always dreamt of the 2 tone wall look.

Maybe I'll also paint my nails.
They need it.
something cool.like what you'd find on pinterest or something.
Pluck my brows. More than just the half attempts I make in the morning.
Get full ready, not "ready enough."
bubble bath. shave the legs.

I've always dreamt of going somewhere fancy enough that I can do a full red lip.
I hope the weekend is nice enough to break out some shorts, Sunny and in the 70's??
So I can drive around with the windows down. Singin.
I may be dreamin.

I am also in the search for brushed nickle knobs for our kitchen cabinets.
Found some cute ones at IKEA.
SO I need to go back there.

Chicken Penne! / Daily Business / Pins

Yesterday I had a day off. Instead of washing it, I put my hair up. 
Trying to do it with style.

I then hung with my bestie. Got some yummy lunch @ Chilli's.
And went to Michaels for Scrapbooking stuff.
I'm still trying to finish our wedding album!
Almost 3 years later...


I also got my wedding ring cleaned.
So pretty after you clean them, they just sparkle like brand new!
And last night I made Enchilada's. Pretty good.
A little too spicy. Next time we'll need a different sauce.


Tonight I made Baked Chicken Penne for dinner.
AND boy oh boy it was SO yummy!
Probably the yummiest thing I have made.. EVER.

I didnt follow the below recipe to a T.
I left out one cup of milk, after 5 it already seemed good to go.
And I kept out the things I dont like. Example:Mushrooms
I'm a picky eater.

Baked Cheesy Chicken Penne
  • 6 tablespoons butter, plus more for baking dishes
  • kosher salt and black pepper
  • 1 pound penne rigate (I used a 14.5 oz box of Ronzoni Smart Taste Penne Rigate)
  • 1 teaspoon olive oil
  • 2 boneless, skinless chicken breast halves (about 8 ounces each), halved horizontally (I used some leftover cooked chicken)
  • 1/2 cup plus 2 tablespoons flour
  • 6 garlic cloves, finely minced
  • 6 cups whole milk
  • 10 ounces white or cremini mushrooms, trimmed and thinly sliced (I used 8 oz of button mushrooms)
  • 1 cup sliced oil-packed sun-dried tomatoes, drained
  • 1 1/2 cups shredded provolone (6 ounces) (I used an italian blend that had provolone in it)
  • 1 1/2 cup freshly grated Parmesan (about 6 ounces)
  1. Preheat oven to 400. Butter two shallow 2-quart baking dishes. If you’re going to freeze one, use a disposable foil pan.  In a large pot of boiling salted water, cook pasta 3 minutes short of al dente; drain pasta and set aside.
  2. While pasta is boiling, heat oil over medium-high heat in a large skillet. Season chicken with salt and pepper; cook until opaque throughout, 3 to 5 minutes per side. Halve each piece lengthwise, then thinly slice crosswise.  While chicken pan is still hot, toss the mushrooms in and saute until golden brown (3-4 minutes).  Use a little extra olive oil if needed.(Since I used left over chicken, I just cooked the mushrooms in the olive oil)
  3. In a 5-quart Dutch oven or heavy pot , melt butter over medium. Add flour and garlic; cook, whisking, 1 minute. While whisking constantly, gradually add milk; bring to a simmer.  Keep whisking frequently as sauce thickens, about 1 minute more. Add mushrooms and tomatoes; cook 1 minute. Take the pan off the heat and and gradually stir in provolone and 1/2 cup Parmesan.
  4. Add chicken and pasta to pot; season with salt and pepper to taste. Divide pasta mixture between baking dishes.  If freezing, place remaining parmesan cheese in a zip-top baggie.  If cooking, sprinkle on top.
  5. Bake, uncovered, until top is golden and bubbling, about 25 minutes. Let stand 5 minutes before serving.

I May, I Might

I may, I might
Just try a new recipe tonight!
Believe it or not, as easy as it is, Me and the Hubster have never just had wraps.

So tonight, I'd like to try a wrap recipe. We already have tortillas in our fridge.
You add cream cheese and cucumbers and stir then layer with turkey.
Then I'd need some kind of side....
We'll see.

I am also dying to try this recipe for Chocolate Chip Brownies! Maybe this weekend??

Ingredients:




Brownies:

4 eggs

1 cup canola oil

2 cups sugar

2 teaspoons vanilla extract

1-1/2 cups all-purpose flour

1/2 cup baking cocoa

1/2 teaspoon instant coffee



1/2 teaspoon salt

1/2 cup walnuts, optional







Filling:

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup sugar

4 tablespoons milk

2 teaspoon vanilla extract

2 cup all-purpose flour

1 cup mini semi-sweet chocolate chips



Glaze:

2 cups milk chocolate chips

2 tablespoons shortening

3/4 cups walnuts, optional





Instruction:

In a large bowl, beat the eggs, oil and sugar. Stir in vanilla. Combine flour, cocoa, coffee and salt; gradually add to egg mixture. Stir in walnuts if desired.

Pour into a greased 9 x 13 baking pan. Bake at 350 for 30 minutes or until brownies toothpick test done. Cool completely.


For filling, in a large bowl, cream butter and sugars until light and fluffy. Beat in milk and vanilla. Gradually beat in flour. Stir in mini chocolate chips. Spread over brownies (works best to just press out with clean hands.); chill until firm.

For glaze, in a microwave safe bowl, melt chocolate chips and shortening in 30 second intervals, stirring after each time, until smooth. Spread over filling. Immediately sprinkle with nuts, pressing down slightly. Yields 3 dozen.

I had a wonderful Christmas weekend with friends family and husband. It was super special to spend time with those I love and care about.



Challenge Update:
1. Sand/Paint side table.
2. Take 200 pictures in one day.
3. Try one work out pin from pinterest.
4. Try one new recipe from pinterest.
5. Make someone's day.
6. Buy something online.
7. Print pictures for album/finalize pages for wedding scrapbook.
8. Have a date night with myself.
9. Make something cool and crafty.
10. Write about something important to me. 


I crossed off number 4! Woot!
Even though I did it wrong and they didnt turn out I still can cross it off.
Right? Haha.

So I TRIED to make cake batter truffles.

I'm embarrassed to even post these.
I was told just to do everything but leave out the eggs.
But I guess thats not correct. So I'd follow an actual recipe.








New Years!
I am excited for the new year and to start some resolutions for myself.
This is all :)



Yikes back to work tomorrow. Its been so nice having a long weekend.
